Pumpkin Spice Latte

- 2 cups whole milk
- 3 Tbsp pumpkin puree
- 1 tsp pumpkin pie spice
- 1 cup strong brewed coffee
- 2 - 3 Tbsp granulated sugar
- 1/4 cup heavy whipping cream
- 1 1/2 Tbsp vanilla extract
In a saucepan, whisk together the milk, pumpkin puree and pumpkin pie spice. Heat over MED heat until the mixture is simmering, but don't bring it to a boil. Turn off the heat.
Stir in the sugar and coffee and let sit on the stove, with the heat off, for 5 minutes. Stir occasionally.
Once the sugar has dissolved, stir in the heavy cream and vanilla.
Serve hot, topped with whipped cream and a dash of cinnamon if desired.

PUMPKIN SPICE BLEND
- 3 Tbsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp ground nutmeg
- 1 1/2 tsp ground allspice
- 1 tsp ground cloves
Mix it all together and store in an airtight container in at room temperature for up to 3 months.
PUMPKIN SPICE SYRUP
- 3/4 cup water
- 3/4 cup light brown sugar (or granulated sugar)
- 1/4 cup canned pumpkin
- 2 tsp pumpkin pie spice
Add all ingredients to a saucepan, whisk well and simmer for 3-4 minutes. Pour through a fine mesh strainer into an airtight container (I use a mason jar). Store in the refrigerator for up to 1 - 1 1/2 weeks.
