Ingredients

  • 8 medium roma tomatoes roughly chopped
  • 1/2 medium red onion roughly chopped
  • 2-3 cloves garlic minced
  • 3-4 green onions chopped
  • 1 jalapeno pepper seeded if desired
  • juice of 1 lime
  • 1/4 cup cilantro
  • 1/4 cup sun-dried tomatoes
  • 1 Tbsp chili powder
  • 1 Tbsp Tajin seasoning
  • 1-2 tsp kosher salt
  • 1/2 tsp ground cumin

Instructions

  • Add all ingredients to blender or food processor and blend until smooth, or until desired consistency is reached.
  • Taste and adjust seasoning if necessary.
