Coca Cola Brownie Sundae

Ingredients

  • 1 box of fudge brownie mix I used Duncan Hines
  • 2 Tbsp vegetable oil
  • 1 egg
  • 1/2 cup coca cola
  • cup scant 1/2 buttermilk
  • Coca Cola Chocolate Sauce:
  • 1/2 cup coca cola
  • cup ¼ cocoa powder
  • cup ¼ light corn syrup
  • cup ⅓ semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees. Grease a 9x13" baking pan and set aside.
  • To the bowl of a stand mixer, add the brownie mix, vegetable oil, egg, coca cola and buttermilk. Using the paddle attachment, beat until thoroughly combined.
  • Pour batter into prepared baking pan and bake for 25 minutes, or until set and a toothpick inserted into the middle comes out clean.
  • Cool brownies on a cooling rack, in the pan, completely.
  • Coca Cola Chocolate Sauce:
  • Combine coca cola, cocoa powder and corn syrup in a small saucepan. Over medium heat, whisk and bring to a slight boil. Once it boils, reduce heat and simmer on low for 3 minutes.
  • Remove from heat and stir in chocolate chips.

Notes

** Can also be done using a hand mixer, or even by hand with a whisk.
** Serve brownies by themselves, drizzled with chocolate sauce, or combined with ice cream to make a sundae.
