Honey Dill Roasted Carrots

- 2 lbs. whole carrots peeled and cut into 1-2 inch pieces
- 2 Tbsp avocado oil or olive oil
- 2 Tbsp honey
- 2 Tbsp fresh dill chopped
- 1 tsp kosher salt
- 1/2 tsp black pepper
Prepare
Preheat oven to 425°F and line a large baking sheet with foil (or parchment paper). You can also roast these on just the baking sheet if you don't mind the clean up.
Spray baking sheet lightly with cooking spray.
Season
Add 2 lbs. whole carrots to prepared baking sheet and drizzle with 2 Tbsp avocado oil and 2 Tbsp honey. Use your hands to toss and combine.
Sprinkle carrots with 2 Tbsp fresh dill, 1 tsp kosher salt, and 1/2 tsp black pepper and toss to combine again.
Roast
Add baking sheet to the preheated oven and roast for 20-25 minutes, giving the carrots a stir about halfway through.
Carrots are done when they are fork tender and caramelized as much as you'd like.
- I've estimated this recipe serves about 6, but the exact number of servings and the serving size are up to you.
- I like to cut the carrots on the bias (diagonally), so they have more surface area touching the baking sheet and can get more caramelized.
- Whole carrots have a thinner end, and a thicker end. Cut the thinner end into longer pieces, and the thicker end into shorter pieces. This helps them roast more evenly.
Air Fryer Directions:
- Preheat air fryer to 360°F then roast the carrots for about 10-15 minutes (depending on the size of your carrot pieces).
- Just make sure you have the carrots in a single layer in the air fryer, or only the top ones will get caramelized and crisp.
