The most juicy and tender grilled chicken comes from this recipe. These Hawaiian-style chicken skewers are so easy to make, but seriously so good.

A simple semi-homemade marinade tenderizes the chicken, and the combination of a pineapple bbq sauce and plenty of seasonings makes the flavor just irresistible!

This recipe is made to be grilled, but if you don’t have a grill, or can’t get outside to grill, I’ve included directions for how to cook these skewers both in the oven, and on the stovetop.

What do I need to make this recipe?

  • Sesame oil – I much prefer using a toasted sesame oil, as it adds a richer flavor.
  • Chicken – I typically use boneless skinless chicken breasts, but chicken thighs will also work well. Just cut them into bite-sized pieces.
  • Bbq sauce – use your favorite brand; I typically use Head Country, Kinders, or Sweet Baby Rays.
  • Brown sugar – light or dark brown sugar will work, so use what you have on hand. I typically use light brown sugar.
  • Garlic – to save some time, I like to use a squeeze tube of pre-minced garlic.
  • Honey mustard – if you don’t have honey mustard available, you can use a dijon mustard instead.
  • Pineapple juice – this can be a can of pineapple juice, or the drained juice from a can of pineapple.
  • Spices – nothing crazy, just salt, pepper, red pepper flakes, and onion powder.
  • Bell peppers – you can use any peppers you’d like, but I love the crispness and pretty colors of the green and red bell peppers.
  • Onion – I prefer to use a red onion, but a white or yellow onion will also work.
  • Pineapple – typically I grab a fresh pineapple, but you can use canned as well.
  • Green onion – this is just a garnish, so it’s optional, but I recommend using it.

How to make hawaiian-style chicken skewers?

This is just an overview; the full ingredients and directions are in the recipe card toward the bottom of this post.

  1. Make marinade/sauce. There’s nothing fancy here, just stirring ingredients together. Just make sure to remove a bit of the marinade and set it aside for basting the skewers with.
  2. Marinate. Due to the acidic pineapple juice, this marinade doesn’t take too long.
  3. Assemble. You’re free to assemble the skewers any way you’d like, but we like to alternate chicken, with some veggies and fruit.
  4. Grill. Grill outdoors, inside on a grill pan or griddle, or cook under your broiler.
  5. Garnish and serve.

Helpful Tip!

If you’re using wooden skewers, make sure you soak them for at least 30 minutes before making the kebabs. This keeps the wood from turning to ash on the grill. In general, I prefer metal skewers, but by all means, work with what you have.

Variations of this recipe

  • Chicken – if you’d prefer to use boneless skinless chicken thighs, they will also work well in this recipe.
  • Other protein – these skewers are also great with pork or shrimp!
  • Veggies – if you’d prefer different or additional vegetables in your skewers, you’re certainly free to add whatever you’d like! Some of my favorites are zucchini, broccoli, and cherry tomatoes.
  • Sauce – to make this recipe easier, I chose to use a store-bought bbq sauce, and then you add things to jazz it up a bit. If you’d rather, you can absolutely make your own!
  • Skewers – if you’d rather use metal skewers, they’ll definitely work well. Plus, metal skewers don’t need to be soaked before using.
  • Separate skewers – while it’s pretty to have the alternating chicken and veggies/fruit, it can be a little tricky to make sure the meat is fully cooked and the veggies/fruit aren’t burnt.  If you’re new to grilling, or simply want this meal to be even easier, do separate skewers; one for chicken, and one for veggies/fruit.

FAQ’s

Can this skewer recipe be made with other kinds of meat?

Absolutely! The marinade and sauce pair well with pork, as well as beef.

Is this recipe authentically Hawaiian?

I make zero claims when it comes to this recipe’s authenticity, this is just my way of making grilled chicken skewers with some Hawaiian-style flavors, based on what’s readily available to me, and the flavors we enjoy.

Making chicken skewers ahead of time

Since the chicken has to marinate, this is sort of a slight make-ahead recipe.

You could assemble the skewers earlier in the day, add them to rimmed baking sheet, cover them with plastic wrap, and refrigerate until ready to grill.

I don’t recommend grilling them entirely ahead of time, as I think grilled food tastes best when it’s fresh off the grill.

Freezing

This marinade also freezes well! Feel free to make the marinade in a freezer-safe bag, add the chicken and combine, then seal and freeze for up to 3 months.

Thaw in the refrigerator, then grill as directed.

Storage

Leftover skewers should be stored in the refrigerator in an airtight container and eaten within 4-5 days.

My Favorite Skewers!

Metal skewers are great because you don’t have to soak them, they’re reusable, and this version has a push bar to effortlessly remove the meat/vegetables from the kebab! I purposely chose to use wooden skewers for the photos to show you that you don’t HAVE to invest in metal ones, but if you can, they’re definitely nice to have.

Ingredients

Marinade/Sauce

  • 1 cup barbecue sauce
  • 1/4 cup pineapple juice
  • 1/4 cup packed light brown sugar
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp minced garlic
  • 1 tsp honey mustard
  • 3/4 tsp red pepper flakes
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder

Skewers

  • 2 lbs boneless skinless chicken breasts cut into 1 inch pieces
  • 1 medium red onion cut into 1 inch pieces
  • 1 green bell pepper cut into 1 inch pieces
  • 1 red bell pepper cut into 1 inch pieces
  • 1/2 medium-sized fresh pineapple peeled, cored, and cut into 1 inch pieces
  • sliced green onions for garnish, optional

Instructions

Marinate chicken

  • In a large mixing bowl, whisk together the BBQ sauce, pineapple juice, brown sugar, sesame oil, garlic, honey mustard, red pepper flakes, salt, pepper, and onion powder. Remove about 2/3 cup of the marinade, transfer it into a separate bowl, cover, and store in the fridge. 
  • Add chicken pieces to the large mixing bowl with the marinade and toss to coat. Cover and refrigerate for up to an hour.

Prepare

  • If using bamboo skewers, soak them in water for at least 30 minutes. If using metal, there's no need to soak.

Assemble skewers

  • Thread chicken, bell peppers, red onion, and pineapple pieces onto skewers in an alternating pattern (or however you'd like), until you're out of ingredients. I usually get about 6 (12" long) skewers out of this recipe). Discard the marinade that's left over after assembling the skewers.

Grill

  • Brush grill grates and preheat grill over MED HIGH heat (if your grill has a temperature sensor on it, you're shooting for around 375°F).
  • Once grill is preheated, add the skewers to the grill grates and grill for about 10 minutes, turning once halfway through cooking.
  • As the skewers are cooking, brush them with the reserved marinade from earlier, liberally on both sides.
  • Chicken skewers are finished cooking when chicken is cooked to an internal temperature of 165°F, and the veggies are golden.

Garnish and serve

  • Remove skewers to a platter or plate, sprinkle with sliced green onions if desired, and serve hot.

Chef Tips

  1. I’ve estimated this recipe serves 6, but you’re free to divide it up into as many servings as you’d like.

Indoor cooking method (grill pan or griddle):

  • Heat grill pan or griddle over MED HIGH heat and brush the pan with an oil that can stand high heats, like vegetable or avocado oil.
  • Add skewers and cook about 10-15 minutes, turning every few minutes and brushing with reserved marinade, until all sides are a little charred and chicken is cooked through (to an internal temperature of 165°F).  The exact time may vary a bit, depending on the pan used and your stovetop.

Indoor cooking method (oven):

  • Preheat oven to 375°F, and arrange skewers in a single layer on a baking sheet lined with aluminum foil (or parchment paper), and bake for 20 minutes, flipping over halfway through, and brushing with reserved marinade on both sides, or until the chicken reaches an internal temperature of 165°F.

Indoor cooking method (air fryer):

  • Make sure the skewers you’re using will fit into your air fryer basket.
  • Preheat air fryer to 400°F, then add skewers to the basket of the air fryer (this may need to be done in batches – you want the skewers to have a little room around each other, and be in a single layer).
  • Air fry for 15-16 minutes, turning the skewers over halfway through and brushing both sides with reserved marinade, or until the chicken reaches an internal temperature of 165°F.

    Hi..love your recipes..they are fabulous..Are the veggies suppose to be crunchy?
    or soft..I stay away from kebabs because does chicken cook faster or etc

      Hi Lucy, thank you! These veggies are a little crisp, and a little soft… but you can definitely make some skewers with only chicken, and some with only veggies, that way everything can be cooked perfectly the way you like it 🙂
