Deliciously fudgy brownie sundaes made with Coca-Cola, topped with a generous scoop of vanilla bean ice cream, and drizzled with a cola chocolate sauce!

These brownie sundaes are incredibly easy, yet SO full of flavor!  Perfect to make for friends and family.

Making these brownies is not challenging at all, in fact, it starts with a boxed brownie mix.

Just add your box of fudge brownie mix to your mixer bowl, then add in vegetable oil, egg, coca cola, and buttermilk.  Mix with the paddle attachment to combine thoroughly, but don’t over mix.

Pour batter into a greased 9×13″ baking pan and bake for about 25 minutes, or until set and a toothpick inserted in the middle comes out clean.  Cool completely.

What sundae is complete without a fantastic sauce?  I chose to make a coca-cola chocolate sauce to really bring that coke flavor home 🙂  I followed the formula from my Guinness Cupcakes with Bailey’s Chocolate Drizzle, and swapped out the ingredients a little.

Combine all your ingredients except chocolate chips, whisk, and bring to a boil.  Reduce heat to a simmer and simmer for 3 minutes.  Remove from heat and stir in chocolate chips.

Now let’s build those amazing brownie sundaes!  Start with a thick, fudgy brownie on the bottom, topped with a big scoop of vanilla bean ice cream, drizzle it all liberally with the coca cola chocolate sauce and finish it with a cherry (or two)!

Ingredients

  • 1 box of fudge brownie mix I used Duncan Hines
  • 2 Tbsp vegetable oil
  • 1 egg
  • 1/2 cup coca cola
  • cup scant 1/2 buttermilk
  • Coca Cola Chocolate Sauce:
  • 1/2 cup coca cola
  • cup ¼ cocoa powder
  • cup ¼ light corn syrup
  • cup ⅓ semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees. Grease a 9×13″ baking pan and set aside.
  • To the bowl of a stand mixer, add the brownie mix, vegetable oil, egg, coca cola and buttermilk. Using the paddle attachment, beat until thoroughly combined.
  • Pour batter into prepared baking pan and bake for 25 minutes, or until set and a toothpick inserted into the middle comes out clean.
  • Cool brownies on a cooling rack, in the pan, completely.
  • Coca Cola Chocolate Sauce:
  • Combine coca cola, cocoa powder and corn syrup in a small saucepan. Over medium heat, whisk and bring to a slight boil. Once it boils, reduce heat and simmer on low for 3 minutes.
  • Remove from heat and stir in chocolate chips.

Chef Tips

** Can also be done using a hand mixer, or even by hand with a whisk.
** Serve brownies by themselves, drizzled with chocolate sauce, or combined with ice cream to make a sundae.

    Quick and easy AND it’s a brownie? Goodness what a treat! I’ll need to try this one as soon as summer rolls around because my dad’s obsessed with cola and we always have boxes!     We are 8 as children and I am the eldest. 😐
    It’s been a year and a half since I stopped drinking Cola (and other soft drinks). Um, I sipped and I mean very little. I loved Coca Cola, too. I haven’t tried cooking/baking with it, though. And this amazes me – very enticing dessert. Thanks for co-hosting, Amanda. Happy FF.

Ohhhh wow, 8… what a big family 😀 You know, I stopped drinking it for the most part as well… I realized about a year ago that I was drinking wayyyyy more pop than I was water, and once I stopped, I felt so much better! I still crave my coke though, so I indulge once in a while 🙂 It was such a fun recipe to create and of course, eat 😉 Happy FF to you as well!!
