Homemade copycat Skyline Cincinnati chili… unique and flavorful, this regional delicacy is easy to make at home for way less than the restaurant charges!

Have you ever had Cincinnati chili?  It’s totally unique, and NOT like a traditional chili, but it’s an absolutely delicacy here in the Midwest.  It’s also really easy to make at home, freezes wonderfully, and can be served in so many ways!

I love hometown things, and growing up in the suburbs of Cincinnati, that means Cincinnati-style chili!

It’s definitely NOT like any chili you’ve had before.  To most people, chili is something like this.  For us Cincinnati-ans… this is our chili:

A meat sauce full of unique seasonings that is served on top of spaghetti and topped with cheese (which we call a 3 way), and sometimes onions and/or beans will be added with the cheese (4 or 5 way).

Another classic way we enjoy this chili is on top of a hot dog, with some mustard and onions and a mound of cheese.

That delicious looking dog is called a coney.  And they are heavenly… seriously.

I know… the term chili is confusing, because this dish is completely different… but wonderful (as most Cincinnati-ans are as well!).

I urge you to try it, at least once.  Most people who try it, love it!

Classic Skyline chili recipe three way with oyster crackers

Around here, you can buy Skyline (and Gold Star) chili in cans, packets, and frozen trays.  Which is convenient, but p-r-i-c-e-y!  So I wanted to find a recipe that starts from scratch… for a few reasons.

  1. The price.  I’m a cheap you know what, and refuse to pay that much for one can of chili.
  2. I don’t want the preservatives and whatever is in those packets.
  3. The most important reason… unless you live here, you probably won’t be able to find those cans, trays or packets in your grocery store.  Bummer huh?  Everyone should be able to enjoy this fabulous chili, no matter where you live!

It’s really simple to make too, just add water, tomato paste and chocolate to a large pot and cook over medium heat for a few minutes.

That’s right, you read that correctly… chocolate.  Not the milk chocolate we all love to snack on mind you, but unsweetened 100% cacao bakers chocolate.  My turkey chili uses this chocolate as well!

Add your spices, vinegar, and your beef.  Crumble it using your fingers, then use a potato masher, whisk, or mash the beef against the side of the pan.  Basically you want the meat all broken up into fine pieces.  I mainly used the fork and went to town with my whisk.  Get mad at it, break up that meat!

Now just bring it to a boil, reduce heat to medium low and let it cook, uncovered for 1 – 1 1/2 hours (you want a low boil).  It will thicken up and become a wonderful meat sauce.  And the smell that fills your house…. incredible!!

It’s up to you how you would like to serve up your chili… do you want coneys?  A “way”?  Or just chili in a bowl with cheese and oyster crackers?

It’s your house, your rules!  I typically go for “ways” and coneys.  Remember, here’s the breakdown.

CINCINNATI CHILI “WAYS”:

  • 2-way = spaghetti and chili
  • 3-way = spaghetti, chili, cheese
  • 4-way = spaghetti, chili, onions OR beans, cheese (my fav is with onions!)
  • 5-way = spaghetti, chili, onion AND beans, cheese

CINCINNATI CHILI CONEYS:

  • Bun, hot dog, chili
  • Bun, hot dog, chili, cheese
  • Bun, hot dog, chili, mustard OR onion, cheese
  • Bun, hot dog, chili, mustard AND onion, cheese (my fav!!)

Traditionally, people top their “ways” with oyster crackers and hot sauce.  They’re great additions, I use them both!

This chili is also fantastic over crispy french fries or even a baked potato!!  You can also use it in an amazing Skyline Chili Dip for your next party.

Homemade copycat Skyline Cincinnati chili... unique and flavorful, this regional delicacy is easy to make at home for way less than the restaurant charges!

Ingredients

  • 5 cups water
  • 6 oz can of Tomato paste
  • 1/2 oz baking chocolate (unsweetened - I use Baker's brand)
  • 1/4 cup chili powder
  • 1 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/4 tsp red pepper flakes, or less, depending on your desired heat level
  • 1/8 tsp black pepper
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 2 Tbsp apple cider vinegar
  • 1 1/4 lb lean ground beef

Instructions

  • Add the water to a large pot.  I like to use my dutch oven for this.
  • Add the tomato paste and chocolate and heat over medium heat stirring to combine for about 3 minutes. (I stir with a whisk to really break up the tomato paste)
  • Add chili powder, cinnamon, garlic powder, cumin, allspice, cloves, red pepper flakes, black pepper, salt, sugar and vinegar.
  • Next, crumble the raw ground beef into the pot with your fingers, then use a potato masher, whisk or fork to break up the meat into very fine pieces.
  • Turn heat to high to bring to a boil.
  • Once boiling, turn the heat down to med-low.
  • Cook, uncovered, for 1 to 1 1/2 hours, at a low boil.. stirring occasionally until sauce has thickened quite a bit.
  • Serve over thin spaghetti or a hot dog.

    I’ve never had the pleasure of eating skyline, but my husband had and loved it. I tried this recipe and it’s about my third time making it! We love it! It’s so comforting— 5 way is how we like ours. Thanks for introducing me to this chili with an easy recipe! I’m hooked and he says it’s just as good as what he had at Skyline.

    I had lived in Northern Kentucky for 2 years about 30 years ago when I was a kid. I was thinking about the unique chili that is famous in that area the other day, and figured it would be an interesting dinner one night. I was skeptical when I saw the different spices in the recipe, and had a hard time wrapping my mind around the bakers chocolate. I gave it a shot, and within minutes of starting the hour long simmer my kitchen was filled with the most heavenly aroma that brought me back 30 years. At that point I knew that it was going to be awesome, and when I took the first bite of my 3-way, I was not disappointed. From what I remember, this is dead on. Fantastic recipe. Thanks for sharing!

      We like to use a good quality sharp cheddar cheese (Tillamook and Cabot are our favorite brands).

    I’ve tried probably a half dozen Skyline clone recipes and always came away disappointed and went right back to buying packets or cans of chili. My tastebuds just aren’t fine-tuned enough to identify what is off about a recipe beyond, “Needs more/less salt.” But the clones always were…taste, texture, whatever. This recipe nails it.

    This recipe received high marks from all members of my family and it’s an absolute winner. #1 son said it’s better than Skyline and that’s high praise. Using an immersion blender (8-10sec) once all the ingredients are added is HIGHLY RECOMMENDED to get the consistency of the restaurant chili.

    I saw this on a YouTube video and fell 100% in love with it. I have been craving it since I first made and it. We have since gone keto so no noodles for me, but tonight I am adding a 1/2 can of rinsed black beans. This chili is simply amazing. Thank you!

    Here in Illinois my local super market (Meijer) sell cans of Sky Line chili for $4.35/can. I am a Sky Line chili lover and after I tried your recipe I wont be buying any more chili from Meijer when I can make my own and its better than the canned Sky Line chili, Thank you

    I’ve never had Skyline Cincinnati chili, but this was really delicious! I added a bit more salt, but that’s just personal preference. I loved all the spices. It smelled and tasted like the perfect cool weather chili. We had it over spaghetti with cheese, onions, jalapeños, and sour cream. I can’t wait to eat the leftovers!

    My BF had never even heard of Skyline chili so I made him your recipe 5 -ways for him and 4-ways for me. He LOVED it. Tonight we finishing it off with Coneys.

    I’m not a Skyline expert but I know this is the best homemade Cincy chili recipe I’ve tried yet. The hardest part was getting the ground beef in fine enough pieces. I ended up (carefully) using an immersion blender which really did the trick.

    As someone who was stationed in Greece, this brought back so many memories of their spaghetti
    with the same kind of seasonings.. I even sprinkled nutmeg on top with parmesan. Delicious on spaghetti or hot dogs!

      I believe the original US recipes were created by Greek immigrants so that makes sense. More of a chili sauce than traditional Texas style chili.

    This clone is fantastic! We have (had?) a Skyline parlor in Clearwater, FL, but for some dumb reason, we now live in the ‘burbs of Detroit. Anyways, this tastes just like the real deal, IMO.. Seems some folks think this went thru some sort of micro-analysis to replicate the exact chemical composition of the restaurant version, only to whine and beotch about it. Almost as bad as other reviewers who spent the same amount of energy griping about them. Oops, like me, LOL!
    So anyways, thanks for posting. Saved, printed, and now my trusted Skyline clone!

    You did not list the spices at all it’s all about the spices the spices are somewhat complex and there’s about 15 spices minimum that goes into most copycat Skyline recipes

      I really like this recipe, I’ve made it twice and everyone who has had some loved it as well. 👍🏼. I think that is funny that you left a comment suggesting the spices are not listed on the SAME page where they are listed lol, people can be so funny sometimes even accidentally.

    I absolutely ***love*** this recipe and have been using it over and over for years now!! I’ve been a huge Skyline Chill fan for 25+ years and your delicious Copycat recipe always hits the spot since the closest Skyline Chili restaurant is about 845 miles away from me so thank you!!

    I recently tweaked it to make a Vegan version and it exceeded my expectations and still tasted very authentic!

    I always go for the 5 Way!! Eating some more right now as I’m leaving this review!!

      I live in Dayton, OH with some of my family from Cincinnati and we all love our Skyline! However, for health reasons some of the family needs the vegetarian version they serve now. Would you be able to share how you made it vegan? We would be so appreciative. Excellent recipe! Thanks so much.

      Thanks for sharing this recipe. When I crave skyline chili this is my go to recipe for several years now since I moved far from a skyline chili restaurant. I actually got some simmering on the stove now. Got up at 6 this morning just motivated to make it. My apartment smells so good think it will make my neighbors hungry.

        My husband and I are from Tennessee. We don’t have chili parlors. He ordered chili at skyline when we recently visited Cincinnati area. It came atop spaghetti and was sweet! He liked it and I hated it. Came here to see why. Chocolate and cinnamon in chili is a new one for me. Not my cup of tea, but appreciate knowing WHY I disliked it so. Thanks for the information.
