Homemade copycat Skyline Cincinnati chili… unique and flavorful, this regional delicacy is easy to make at home for way less than the restaurant charges!

Have you ever had Cincinnati chili?  It’s totally unique, and NOT like a traditional chili, but it’s an absolutely delicacy here in the Midwest.  It’s also really easy to make at home, freezes wonderfully, and can be served in so many ways!

I love hometown things, and growing up in the suburbs of Cincinnati, that means Cincinnati-style chili!

It’s definitely NOT like any chili you’ve had before.  To most people, chili is something like this.  For us Cincinnati-ans… this is our chili:

A meat sauce full of unique seasonings that is served on top of spaghetti and topped with cheese (which we call a 3 way), and sometimes onions and/or beans will be added with the cheese (4 or 5 way).

Another classic way we enjoy this chili is on top of a hot dog, with some mustard and onions and a mound of cheese.

That delicious looking dog is called a coney.  And they are heavenly… seriously.

I know… the term chili is confusing, because this dish is completely different… but wonderful (as most Cincinnati-ans are as well!).

I urge you to try it, at least once.  Most people who try it, love it!

Classic Skyline chili recipe three way with oyster crackers

Around here, you can buy Skyline (and Gold Star) chili in cans, packets, and frozen trays.  Which is convenient, but p-r-i-c-e-y!  So I wanted to find a recipe that starts from scratch… for a few reasons.

  1. The price.  I’m a cheap you know what, and refuse to pay that much for one can of chili.
  2. I don’t want the preservatives and whatever is in those packets.
  3. The most important reason… unless you live here, you probably won’t be able to find those cans, trays or packets in your grocery store.  Bummer huh?  Everyone should be able to enjoy this fabulous chili, no matter where you live!

It’s really simple to make too, just add water, tomato paste and chocolate to a large pot and cook over medium heat for a few minutes.

That’s right, you read that correctly… chocolate.  Not the milk chocolate we all love to snack on mind you, but unsweetened 100% cacao bakers chocolate.  My turkey chili uses this chocolate as well!

Add your spices, vinegar, and your beef.  Crumble it using your fingers, then use a potato masher, whisk, or mash the beef against the side of the pan.  Basically you want the meat all broken up into fine pieces.  I mainly used the fork and went to town with my whisk.  Get mad at it, break up that meat!

Now just bring it to a boil, reduce heat to medium low and let it cook, uncovered for 1 – 1 1/2 hours (you want a low boil).  It will thicken up and become a wonderful meat sauce.  And the smell that fills your house…. incredible!!

It’s up to you how you would like to serve up your chili… do you want coneys?  A “way”?  Or just chili in a bowl with cheese and oyster crackers?

It’s your house, your rules!  I typically go for “ways” and coneys.  Remember, here’s the breakdown.

CINCINNATI CHILI “WAYS”:

  • 2-way = spaghetti and chili
  • 3-way = spaghetti, chili, cheese
  • 4-way = spaghetti, chili, onions OR beans, cheese (my fav is with onions!)
  • 5-way = spaghetti, chili, onion AND beans, cheese

CINCINNATI CHILI CONEYS:

  • Bun, hot dog, chili
  • Bun, hot dog, chili, cheese
  • Bun, hot dog, chili, mustard OR onion, cheese
  • Bun, hot dog, chili, mustard AND onion, cheese (my fav!!)

Traditionally, people top their “ways” with oyster crackers and hot sauce.  They’re great additions, I use them both!

This chili is also fantastic over crispy french fries or even a baked potato!!  You can also use it in an amazing Skyline Chili Dip for your next party.

Homemade copycat Skyline Cincinnati chili... unique and flavorful, this regional delicacy is easy to make at home for way less than the restaurant charges!

Ingredients

  • 5 cups water
  • 6 oz can of Tomato paste
  • 1/2 oz baking chocolate (unsweetened - I use Baker's brand)
  • 1/4 cup chili powder
  • 1 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/4 tsp red pepper flakes, or less, depending on your desired heat level
  • 1/8 tsp black pepper
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 2 Tbsp apple cider vinegar
  • 1 1/4 lb lean ground beef

Instructions

  • Add the water to a large pot.  I like to use my dutch oven for this.
  • Add the tomato paste and chocolate and heat over medium heat stirring to combine for about 3 minutes. (I stir with a whisk to really break up the tomato paste)
  • Add chili powder, cinnamon, garlic powder, cumin, allspice, cloves, red pepper flakes, black pepper, salt, sugar and vinegar.
  • Next, crumble the raw ground beef into the pot with your fingers, then use a potato masher, whisk or fork to break up the meat into very fine pieces.
  • Turn heat to high to bring to a boil.
  • Once boiling, turn the heat down to med-low.
  • Cook, uncovered, for 1 to 1 1/2 hours, at a low boil.. stirring occasionally until sauce has thickened quite a bit.
  • Serve over thin spaghetti or a hot dog.

    I’m going to try it looks excellent. I have made Cincy chili for years from a packet. Excited to try this. Helpful tip if u add cold water to pot and then add the meat and stir with a fork. The meat de clumps very easily. Then cook as usual. The secret is cold water.

    Hi! We are a fan of skyline chili, however, after reading some of the other reviews and comments, I didn’t realize it was American chili, and I added the other more spicy chili and my goodness, it had some heat to it. Next time, I will adjust for the chili. Pretty good though! Thanks for sharing!

    Hi, u live in Malaysia and I really miss Skyline Chili….
    Looking at your recipe, I think it’s doable, but beef here quite pricey… can I use minced pork instead????

      Yes, it’s correct… but keep in mind this is American chili powder (like McCormick brand) not just dried chile peppers like some other types are.

    This recipe is amazing! Thank you for sharing. We are a family of vegetarians and vegans so we substitute impossible burger and enable diners to put cheese on top, along with green onions, sour cream, etc!

      The recipe here is awesome… but if you are looking for the cans of Skyline Chili – I’m in WV too and have found it in my local WalMart and Kroger’s but I’m in the southern part of the state.

    I haven’t had Cincinatti Chili since my aunt made it when I was kid. I was feeling nostalgic and went to find a recipe online- took a chance on this one, and I’m glad I did! This is a keeper. Tasted like the chili I remember. My husband and I loved it! Thank you so much for the recipe!

    Im so glad i found this i moved to Florida and just couldn’t bring myself to pay 20 dollars for 5 packs of seasoning. saw a lot of people try to make something similar but they all lacked the chocolate
    its just not Cincinnati chili without chocolate. loved this recipe and made it keto with palmini noodles and the leftovers i chopped up and stuffed bell peppers covered with cheese you should definitely try it even with normal noodles.

      I made this right before having to leave town for the weekend, figuring it’d be perfect for a quick dinner when I got home. Well, my brother stayed to watch my pups, and when I got back, he sheepishly said he’d eaten it all! Lol. So I’m making it again today!
      One question: does coleslaw ever come into play on a coney?
      And one comment: the last coney “way” you list is actually a six-way, if you have bun, hot dog, chili, mustard, cheese AND onions! (And it’s the way I like mine, btw)!.

        Hope you get a chance to try it this time 😉 I’ve never seen coleslaw on a coney, but we 100% put coleslaw on our pulled pork bbq sandwiches. The coneys don’t technically have ways, so the bun isn’t counted… just the spaghetti versions are the “ways” 🙂

          Aha! That makes sense on the coney “ways”! And yes, I got to eat it this time! I had some over spaghetti last night (4-way) and will have a coney for lunch today! (For the record, my brother is vegan and I’m vegetarian, so I use Morningstar Farms Griller crumbles (about 1.5 bags). And I’ll be using Light Life veggie hot dogs today. Just an FYI, if anyone ever asks if you can make it veggie/vegan friendly.) This recipe is DELICIOUS! I live in Colorado now, but I miss Skyline chili in DC. (Yes, they had a veggie version there back in 1990). Thanks again for sharing!

    I made this last night for supper it was really really good. I seen it on TV many times on food Paradise and I finally tried it. It kind of reminds me of the chili sauce I make when I make chili dogs, but I don’t put chocolate or cinnamon in my chili sauce. I’m going to have to get some hot dogs and make chili dogs cuz I got some left over

    I would consider myself to be well, not a very good cook! If it’s grilling a steak, or a Beer Butt chicken, I can hold my own. But when it comes to the kitchen, I usually just do the dishes. So today, I decided to give this copycat Skyline Chili a try. I followed this exact recipe, and it turned out fricken Deeelicious! The meal was Scruptrulecent! I will be making this again!     Amanda, I see beans listed in the “ways.” Are they simply added in to this recipe with the other ingredients? Are they prepared separately? And (last one, I promise) what type of beans?

    I haven’t been to Cincinnati yet; just wanted to keep it authentic. 🙂

      Hi Joe 🙂 I believe the traditional bean used are kidney beans, and they’re just warmed up a little from the can and added on top of the spaghetti/chili mixture. Then as you eat it, they get mixed in, but they aren’t cooked together… at least traditionally 🙂

    Made this today. Never really heard of Cincinnati chili but we do eat chili over spaghetti here in St. Louis. (Steak and Shake is well known for their chili 5 ways) but it is very different than this chili. This recipe was delicious over spaghetti, with diced onions and cheese. It is now saved in my cool book!

      This recipe wasn’t designed to be cooked in a slow cooker, but I do know some readers have kept it warm in one after being cooked.
