Creamy no bake white chocolate lemon cheesecake tarts, topped with your favorite fresh fruit, mint, and a dusting of powdered sugar.  Impressive and easy!

No need to stress about dessert… I’ve got you covered with these white chocolate lemon cheesecake tarts!  No-bake, easy, and really impressive!  The smooth and creamy filling is as silky as it is flavorful, and you can top it with anything you want!

Impressive and easy! | http://thechunkychef.comWhen the dog-days of summer hit, and the mere thought of even turning on your oven send you running for the hills… that’s where no-bake desserts reign supreme!!  With a little help from the store, you can have these white chocolate and lemon tartlets ready in no time!

My family is a huge fan of anything and everything cheesecake flavored (like these funfetti cheesecake stuffed crescent rolls), so I knew these would be a big hit.  Cool, creamy white chocolate cheesecake filling, kissed with fresh lemon flavor, fill up the tartlet shells perfectly.

If you wanted to, by all means, go ahead and make your own tartlet shells.  Usually, I’m a big proponent of making things from scratch… but summer fun means there’s always some last minute events.  You don’t want to show up empty handed, so that’s where things can get frustrating.

I found these amazing pre-made shortbread tartlet shells at my local grocery store, and immediately knew I had to buy them.  They taste delicious, and make easy desserts even easier!

Just beat the cream cheese until light and fluffy, then beat in the melted white chocolate and sour cream.  Fold in cool whip and lemon zest.  Ta-da!  Depending on how you want to fill your tarts, you can just spoon the filling, or refrigerate until firm enough to pipe it using a pastry bag.

Then you can top your tarts with just about anything you’d like!  I chose some lemon zest, fresh raspberries and a sprig of fresh mint.  Then I lightly dusted them with powdered sugar for presentation.  Easy peasy!

I sure hope you all give these white chocolate lemon cheesecake tarts a try this summer!  They’re easy enough to whip up on a moment’s notice, yet fancy enough that you can serve them at an elegant party or get together!

Im making this recipe for a friends birthday about how many tartlets does this recipe make?

It all depends on how much you fill the tartlets and how big yours are, but I would estimate around 20-24.

Hi I live in Australia and I don’t think we sell cool whip what can I use instead? Is it the same as whipped cream?

Cool whip is a stabilized whip cream that holds it’s shape more than a traditional whipped cream. This is a great homemade version https://dinnerthendessert.com/homemade-cool-whip/

You can make the filling ahead of time, but I wouldn’t put it in the tart shells until ready to serve 🙂

Hi Hunter 🙂 Well you know, we all have different tastes, likes and dislikes. There are PLENTY of recipes online for homemade cool-whip (stabilized whipped cream), and a quick Google search should pull them up. Best of luck with your improvisations.

Hi Leah 🙂 It all depends on what size tarts you’re filling, and how full you fill them… but it makes about 2 cups of filling. I was able to fill about 25 of the tart shells I was using.
