One Pan Creamy Garlic Chicken Breasts

Chicken breasts have a bad reputation for being dry and bland.  In this recipe, the chicken is moist and tender, and positively dripping with a velvety garlic sauce.  Definitely not bland at all!

COOKING CHICKEN BREASTS

For this recipe, I like to either buy thinly sliced chicken, or slice regular chicken breasts in half from right to left, opening them like a book.  This is a good photo tutorial, although I don’t usually pound the chicken.

The reason I do this, is two-fold.

  1. You can turn 2 chicken breasts into 4 cutlets, so it’s very economical.
  2. Thinner chicken cooks quicker, making this truly a 30 minute meal.

Dredging the chicken in a bit of flour helps give it a golden “crust”, and when you add the chicken back to the pan with the sauce, the flour helps thicken up the sauce.

Last but not least, DON’T clean out the pan between browning the chicken and making the sauce!  All those browned bits of chicken are pure flavor GOLD!

MAKING THIS CHICKEN BREASTS RECIPE WITH OTHER PROTEINS

The beauty of this recipe is that it’s easy to make with other proteins as well!

We all get tired of chicken from time to time, so these are our favorite options:

  • Pork chops
  • Shrimp
  • Steaks
  • Salmon

ADDITIONAL FLAVOR ADD-INS

I love versatile recipes, and this creamy garlic sauce is a great base to add other flavors to!

Some of my favorites are:

  • Asiago cheese
  • Fresh or dried herbs
  • Sun-dried tomatoes
  • Sautéed mushrooms
  • Fresh spinach
  • Basil pesto
  • Mustard

While I think this meal is fabulous as is, you could serve it alongside some pasta for a truly stick-to-your-ribs dinner!

HOW TO MAKE A PAN SAUCE

Making a pan sauce is my favorite way to make a sauce because you don’t have to dirty another pan!  Plus you get the added bonus of all the flavors of what was cooked in the pan before the sauce.

After the chicken has been browned on both sides and removed to a plate, add in a drizzle more oil and saute the shallot and garlic.

Add in the chicken stock and use a wooden spoon to really scrape the bottom of the pan.  This loosens up any browned bits and incorporates that flavor into the sauce.

Add in the cream and seasonings, stirring well.  Add in the cheese and butter and your sauce is complete!

This pan sauce method can be used to make just about any pan sauce you want!

One Pan Creamy Garlic Chicken Breasts

Tender chicken breasts smothered in a rich garlic cream sauce, all made in the same pan, and ready in less than 30 minutes!

Ingredients
  

  • 4 chicken breast halves
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika
  • 1/4 cup all purpose flour - (for dredging)
  • 2 Tbsp olive oil
  • 1 Tbsp butter
  • 2 shallots, - finely minced (or 1 small yellow onion)
  • 2 Tbsp finely minced garlic
  • 1 1/3 cups chicken broth or stock
  • 1 - 1 1/3 cups heavy cream
  • 1/4 tsp black pepper
  • 1/4 tsp dried Italian seasoning
  • 1/3 cup grated Parmesan cheese - (fresh is best)

Instructions
 

  • Add flour to a shallow dish. Season chicken on both sides with a total of 1/2 tsp salt, 1/2 tsp pepper, and 1/4 tsp paprika. Add chicken to flour dish, one at a time, turning to coat lightly in flour.
  • Heat olive oil in heavy skillet over MED HIGH heat until hot. Add butter, then add flour-dredged chicken to skillet, being careful not to overcrowd the pan. If your pan is less than 12 inches across, you may need to brown the chicken in batches.
  • Cook chicken for approximately 4-5 minutes per side, until cooked and golden brown. Remove to a plate and set aside.
  • Reduce heat to MED LOW, and add a small drizzle of oil to pan (remember, DON'T clean it out!), then add shallots and cook for 2-3 minutes, until soft and fragrant. Add garlic and cook another 30 seconds or so.
  • Carefully pour in chicken broth or stock, scraping the bottom of the pan to loosen any browned bits. Pour in heavy cream and stir well to combine.
  • Cook 2-4 minutes, or until thickened slightly. Stir in 1/4 tsp each of pepper and Italian seasoning, and Parmesan cheese. Add chicken back to the pan, nestling them in and moving them around so the flour will help thicken the sauce.

Notes

If sauce isn't thickening up to your liking, mix 2 tsp of cornstarch with 1 Tbsp heavy cream and stir into the sauce.  Cook and stir another minute or so and it should thicken up nicely.

  1. Yummy! Only ingredient I substituted was evaporated milk for the heavy cream…pajama kind of day and didn’t want to drive to the store. We poured the sauce over oven roasted potatoes and steamed broccoli…so good! Definitely a make again but may try to modify for the crockpot!

  4. WOW!! This was AMAAAAAAAZING! I made this last night and even my super picky 5 year old enjoyed it to the point of cleaning his plate – not a common event. My 6 year old dubbed me “the greatest cook in the world,” and my husband said the dish was perfect. I made a few substitutions and omissions out of necessity (and a teeny mistake), and it was STILL great. With no chicken broth, Italian seasoning, shallots, or fresh parm on hand, I used moscato, onions, ground thyme, and dried parsley as subs. My mistake was adding the seasonings to the flour, but I added a little more to the chicken as well and it was great!!! I’ll definitely make this again and again and again! Yum!!!🤤

  6. I made this for Sunday dinner & I must say…it was GREAT!!!!!! I didn’t follow the recipe as is as I used a large “candy cane” onion from an Amish fruit stand & used that instead. Other than that…I followed EXACTLY! OH, MY GOODNESS! THAT is an UNDERSTATEMENT!!!!! I WANT to swear like a sailor! The kitchen smelled so good that it took ALL the WILLPOWER I DIDN”T have NOT to taste as I was going. I also didn’t have Parmesan cheese but I DID have Cojito ( I used that on Mexican corn on the cob & had some left over). I have NO idea what it tastes like with the Parm and not sure if I’d make it with it or not BUT it’s a GREAT substitute (FYI). Those few changes only made it much better to ME & my family LOVED it! It will be on my rotation.

    • This was excellent! I did not halve the chicken breasts, so the chicken-to-sauce ratio was off but that was my fault, not the recipe! I’d recommend following the instructions as written or halving the sauce ingredients for two full chicken breasts. The sauce is very flavorful. This felt very lucious for a weekday meal and yet it was quick and easy.

  33. Really delicious! I followed the recipe measurements but used sour cream in place of heavy cream as I didn’t have any. I also added a swirl of mustard to the sauce and mixed that in. So good! Because of the lower fat content of the sour cream, the sauce wasn’t as thick but it still had a great texture and I’m sure with a touch of butter and flour, it would have thickened nicely.

  68. Fantastic recipe! I used boneless chicken thighs cut into bite sized pieces and added Portobello’s mushrooms. I also used almond milk and regular milk along with the cream to cut down on some fat (although the cream really makes this dish). I love this recipe because it’s quick, easy, delicious, and versatile. Try adding guyrere cheese with the parnesan..tastes great! Broccoli would be good with this recipe as well! We served it over angel hair pasta ☺️

    I have a question though…instead of using wheat flour to coat that chicken, can you use coconut or almond flour? Would it thicken the sauce like the wart flour does? 

    • So glad you loved it!! I think you could totally use almond or coconut flour 🙂 I’ve not used them, so I can’t say if it would thicken the same way, but if you find it’s not thickening the same, just whisk together about a tablespoon of cornstarch (or arrowroot) with a tablespoon and a half of water (until smooth), and then stir in into the sauce.

I really like that the chicken is seasoned before it is dusted in flour and fried. The chicken is well flavored, and I don’t waste any spices by mixing them in the flour and then throwing away whatever flour mixture is not used.

    • You can, but you’ll likely have to make a slurry of cornstarch and water mixed together, then added to the sauce to thicken it (since it won’t have the flour to thicken)

I also did a cheese combo fresh parm and fresh romano and 1 1/3 cup of whipping cream so we could poor the sauce over noodles. This was a huge hit. My family said this tastes like something you would get served in a good Italian Restaurant.

  100. This recipe is INCREDIBLE! The only change I made was to add 1/4 cup of powdered Alfredo sauce to the milk/chicken stock mixture. The resulting meal was a HUGE hit with a 100% success rate. With a picky husband; an autistic son who is finicky about new foods, flavors, and especially textures; and a daughter is afraid of flavor, this is a REALLY BIG DEAL.

  105. Excellent easy recipe. I didn’t have heavy cream so I used 2% milk and added a little flour (about a tbsp) to it to thicken it up a little. I used beef broth as that’s what I had on hand. Was very good! I’m sure it’ll taste even better when I use chicken broth. Thanks for this recipe it’s a keeper.

    • So happy you loved the recipe! The calorie count (estimated) is for 1 serving, which would be 1 breast, however, it’s assuming you also consumed 1/4 of the cream sauce.

  108. This has got to be one of the best recipes I’ve tried this year in flavour, texture and ease to make. The chicken was so tender and juicy. The Italian seasoning in the sauce gave it an amazing boost in flavour. The family couldn’t get enough of it. The sauce wasn’t as heavy as other cream and alfredo type sauces. I added extra flour to thicken the sauce, which tasted delicious over pasta. A definite keeper!

Hmm, we’re not vegan so I don’t have a lot of experience with vegan cooking… but I would say to use vegetable broth/stock instead of chicken, and maybe swap the chicken for extra firm tofu? Or you could leave the “meat” component out completely and use this sauce over some pasta?

    ~Don’t skimp on EVOO & butter each step!
    ~no cream etc? Substitute regular milk + extra butter (room temp milk best, and add 1 Tbs lemon juice to the Milk to make it buttermilk-y… let sit 5+ min)
    ~to thicken sauce: once onions are close to done (~4-5 minutes of sautéeing) & garlic has been added, add 2 Tbs butter, melt down, add 4Tbs flour: sprinkle on top of onion/garlic, mix it around, turn heat up a bit for 2-3 minutes, mixing all the while to cook down the flour (similar to a roux)
    ~follow rest of recipe, and reviewers suggestions to add spinach!
    ~(ps- if you’re adding tarragon or some other herb, this recipe can no longer be called “garlic”, ‘cause they’ll overwhelm the show! It’s OK! just be prepared)

  139. Oh yum, yum, YUM!!! This recipe is a keeper!! I used tenderloin chicken strips and it worked beautifully! Didn’t have heavy cream so I used the coconut milk inside of my fridge. Didn’t have chicken stock so I poured 1-1/3 c water and added 2t “Better than Buillion” vegetarian flavor. To thicken, I took the hot broth and leftover flour from dredging and whisked that together. My husband LOVED it!!  Thank you, 5 stars!

    • You could use water, but add a tablespoon or so of butter with it, to give it a touch more flavor. I’ve not tested this recipe other than as written, so I can’t guarantee it’ll taste the same.

    Followed recipe but instead of butter used plant based butter (I’m allergic to milk protein) in combination with olive oil. For cream substitute I’ve used oatmeal cream and for parmesan cheese substitute I’ve used nutritional yeast. My kids loved it even though one of them is a finicky eater.

A keeper!  This tastes so fresh and delicious.  It is quick and easy.  I had chicken stock and used half heavy cream, half, half-n-half, chicken stock, and added turmeric with the paprika, salt and pepper.  Honestly, I didn’t measure anything at all.  Just put olive oil and about two pats of butter in the pan, cut one extra large chicken breast into about 9 tenders, and followed the recipe from there. Everyone in my family loved it! We will make this at the beach when we go this Summer to SC!

      This dish is so filling! We had Mushroom ravioli with it and I added Laccinato Kale to the sauce for color and for veggies. We also had broccoli too.

    • Sorry, on the weekend days I’m with my family… but it’s one to one and a third cups, meaning this amount can vary from 1 cup to 1 and a third cups from person to person and preference to preference.
