This festive and pretty Bellini is made with the sweet and tart combo of pear and pomegranate.  It’s pretty color makes it perfect for a romantic night in!


Spice up a party or romantic dinner night with these pear pomegranate Bellinis!  This is one Bellini that you’ll want to sip over and over, and you’ll love how easy they are to make!

I don’t do a lot of cocktails here on the blog… not because I don’t like them (I definitely do!), but because most of the time I’m a simple beer or whiskey on the rocks kind of gal… and those aren’t exactly recipes lol.  BUT… every now and then, I like to feel a bit girly and sip on something bubbly, sweet, and pretty.  Like these Pear Pomegranate Bellinis!!

I mean just look how beautiful!  I love the blush pink color with the little pops of red from the pomegranate arils.

I can’t take full credit for this recipe… I saw it in a Cooking Light magazine and just fell in love!!  Can you imagine serving these at your next girl’s night, a bachelorette party, Valentine’s Day bash, or even just for you and your sweetie on a date night in?

If you wanted to get really fancy, you could add something green to the garnish, like a sprig of fresh rosemary!

This recipe uses Prosecco, which is usually a bit lighter and fizzier than champagne, but I think if you substituted champagne, it would still taste just as amazing.  I really like the use of Prosecco here, not only for the fruity notes, but also because of it’s price tag.  A quality bottle of Prosecco will only cost about $12-15 here in Ohio!

This pear pomegranate Bellini recipe makes about 4 cups (so eight 1/2 cup servings), but is easily doubled if you’re serving a crowd 🙂

There are tons of “hacks” online about how to seed a pomegranate, and honestly, some of them do work, but I usually prefer to just pick up a container of pomegranate arils from my grocery store.  For just a few dollars, I get more seeds than I would get from one pomegranate, and none of the work!

This festive and pretty Bellini is made with the sweet and tart combo of pear and pomegranate. It's pretty color makes it perfect for a romantic night in!

Ingredients

  • 5 oz pear brandy
  • 3 oz pomegranate juice
  • 1 bottle Prosecco (750ml) chilled
  • 1/4 cup pomegranate arils plus some extra for serving
  • 1 Anjou pear, thinly sliced plus some extra for garnishing

Instructions

  • To a glass pitcher, add pear brandy and pomegranate juice and stir.  
  • Pour in prosecco, arils and pear slices and gently stir.
  • To serve, add a sprinkle of pomegranate arils to bottom of a champagne flute, top with a few cubes of ice, pour in Bellini, garnish with a few slices of pear if desired.

Chef Tips

1 ounce is approximately 2 Tablespoons, so  5 oz is approximately 10 Tablespoons and 3 oz is approximately 6 Tablespoons
