Who’s enjoying the summer weather? Warm breezes, cold drinks, and grilled foods… those are my favorite things about summer!

If your family is anything like mine, no matter the season, you eat quite a bit of chicken. And after a while, you’re desperate for a meal that isn’t the same thing you normally make.

So it’s nice to change it up a bit… with pork instead of chicken!

Thick cut pork chops stay nice and juicy after being grilled, and the simple marinade adds so much delicious flavor.

This marinade is a great one to have in your back pocket, since it works so well on so many cuts of pork, and chicken too!

How to make honey mustard grilled pork chops?

This is just an overview; the full ingredients and directions are in the recipe card toward the bottom of this post.

  1. Make marinade. You can either make the marinade in a bowl, or in a resealable plastic bag.
  2. Marinate pork. I recommend at least 30 minutes, but it can marinate for up to 8-12 hours.
  3. Grill. If the weather isn’t cooperating, the pork chops can be cooked on the stovetop as well.

Helpful Tip!

For this recipe, I definitely prefer to use thick-cut pork chops that are between 1-2″ thick. Thinner chops will cook much quicker, and can be more prone to drying out.

Variations of this recipe

  • Pork – this recipe works well with boneless or bone-in pork chops, and would also work with other cuts of pork, such as a pork tenderloin.
  • Other protein – I haven’t tested it, but I think this marinade would work really well with chicken too.
  • Additional spices – I purposely kept the seasonings to a minimum in this recipe, to allow the honey mustard flavors to shine through. But you can add extra seasonings if you’d like.
  • Stovetop – if you don’t have a grill, or the weather just isn’t cooperating, this pork chop recipe can be cooked on the stovetop as well. Check out all the details in the “Chef Tips” section right below the recipe.

FAQ’s

How long do you grill pork chops?

There are a number of factors that go into how long pork chops need to be cooked. How hot the grill is, how thick the pork chops are, what temperature you want the pork to be cooked to, etc.

At what temperature is pork safe to eat?

The USDA recommends pork be cooked to an internal temperature of 145°F. I like to pull my pork chops off the grill when they’re about 140°F, then place them on a plate loosely covered with foil. They’ll continue cooking those last few degrees gently off the heat, and it prevents the meat from getting dried out.

Making grilled pork chops ahead of time

I don’t recommend grilling the pork chops entirely ahead of time, as I think grilled food tastes best when it’s fresh off the grill.

Since the pork has to marinate for at least 30 minutes, this is kind of a slight make-ahead recipe, but you can have the pork marinating for up to 8-12 hours if you want to make it longer in advance.

Freezing

This marinade also freezes well! Feel free to make the marinade in a freezer-safe bag, add the pork chops, combine, then seal and freeze for up to 3 months.

Thaw in the refrigerator, then grill as directed.

Storage

Leftover pork chops should be stored in the refrigerator in an airtight container and eaten within 4-5 days.

Ingredients

  • 4 thick-cut pork chops
  • 3 Tbsp honey mustard
  • 2 Tbsp honey
  • 2 Tbsp reduced sodium soy sauce
  • 4 cloves garlic minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

Marinate pork

  • Add the honey mustard, honey, soy sauce, garlic, salt, and pepper to a large resealable plastic bag. Seal, then shake or massage until marinade ingredients are combined.
  • Add pork chops, then seal the bag again. Place bag on a plate and refrigerate for at least 30 minutes, or up to 8-12 hours.

Prepare grill

  • Preheat grill over MED or MED-HIGH heat (you're shooting for a temperature of about 350°F). Make sure grates are clean.

Grill pork

  • Brush your grill with a little avocado or vegetable oil and grill pork chops for about 6 minutes per side, until beautifully charred and cooked to an internal temperature of 145°F degrees.

Rest and serve

  • Transfer pork chops to a plate and cover loosely with foil. Let rest 2-5 minutes.
  • Serve warm with desired sides.

Chef Tips

  1. Thinner pork chops will need less cooking time, a good starting point is 3-4 minutes per side.
  2. Bone-in chops will need more time – an internal meat thermometer is super helpful to determine when the pork is finished cooking.
  3. Instead of grilling, you can cook these pork chops in a grill pan or regular skillet on the stovetop. Cook over MED heat for 6-7 minutes or until golden brown and cooked to an internal temperature of 145°F.
